The Perfect Summer Treat

It’s summertime in Minnesota! Whether you’re relaxing at the lake, taking in a baseball game, heading to the fair or engaging in another outdoor activity here in Lakes Country, the heat and humidity definitely can’t be ignored.

No worries! We’ve got the perfect frosty treat to help you beat the heat. Fresh Fruit Popsicles are pretty, fun for the kiddos to help with, and as an added bonus, you get to take advantage of all the wonderful fresh fruit this time of year.

Fresh Fruit Popsicles

Ingredients:

2 ½ to 3 cups fresh fruit (such as sliced peaches, sliced kiwis, chopped strawberries, raspberries, and blueberries)

1 ½ to 2 cups fruit juice (such as fruit punch or white grape juice)

Directions:

  • Combine fruit in a mixing bowl and distribute evenly between 8 popsicle molds.

  • Add juice to molds to just cover the fruit.

  • Insert popsicle sticks and freeze until solid (approximately 6 hours).

  • Enjoy!
